Chess Pie
April 1931
8 egg yolks
3 c. white sugar
¼ c. cream
1 tsp. vanilla or lemon extract
rich pastry crust (such as Flaky Pastry, page 112) in muffin tins
Mix together in order given. Fill unbaked pie crusts. Bake in slow oven (300°F) for 20 minutes to ½ hour.

Buttermilk Pie
September 1934
2 tbsp. butter
2 tbsp. flour
2 egg yolks + 1 whole egg
1½ c. sugar
1 tbsp. lemon juice
2½ c. buttermilk
meringue (see page 123)
Cream the butter and flour together. Add the beaten yolks and egg. Add sugar, lemon juice, and buttermilk, stirring well. Pour into pie plates lined with (unbaked) rich pastry and bake at 450°F for 10 minutes before lowering to 350°F. Use 2 leftover egg whites for meringue.
